Case Study:
Kiana is a trained chef. She has recently been hired as the lead culinary director of a community food centre in Scarborough, where she will oversee the foodservice operation for a daycare centre, a daily hot meal service, as well as an afterschool meal program for the community. She has been tasked with creating a weekly menu of lunch and dinner items that are nutritionally rich and can help address the health of the community through food.
Currently, the menu consists of canned soup with grilled cheese for lunch served with a chocolate chip cookie and chocolate milk, and mashed potatoes with a pork chop and broccoli for dinner served with a fruit cup and apple juice.
